How to choose the right air fryer — capacity, basket style, wattage, and the features that actually matter
What is an air fryer, really?
An air fryer is a compact convection oven. A heating element sits above the food, and a powerful fan circulates hot air at high speed. The result: crispy, browned food with a fraction of the oil of deep frying. It's not frying — it's supercharged convection baking — but for most foods, the results are close enough that the name stuck.
Basket vs. oven-style
Basket-style (recommended for most)
The classic air fryer. A pull-out drawer with a perforated basket. Food sits in a single layer, air circulates all around. Best crisp, fastest cook times, easiest to use. Most of our recommended models are basket-style.
Oven-style (toaster oven with air fry mode)
Larger, holds more food, often has multiple rack positions. Good if you want one appliance to replace a toaster oven AND air fryer. Trade-off: slower preheat, less intense crisping, larger footprint.
Capacity — the most important spec for families
- 2-3 qt: Solo cooking. Fits a single chicken breast or small side of fries.
- 4-5 qt: The sweet spot for 1-2 people. Fits 2 chicken breasts or a pound of fries.
- 5.5-6 qt: Standard for 3-4 person families. Handles a whole bag of frozen fries or 4 chicken thighs.
- 8-10 qt (dual-zone): Two independent baskets. Cook two foods at different temps/times simultaneously. The Ninja DZ201 is the category leader.
Don't overfill. Air fryers work by moving air around food. Cramming the basket kills the crisping effect. If you regularly cook for 4+, get two smaller units or a dual-zone model.

Air fryer tips for best results
- Don't use aerosol cooking spray — the propellants can damage non-stick coatings. Use an oil mister or brush.
- Shake the basket halfway — for fries, wings, and vegetables, a mid-cook shake ensures even browning.
- Pat food dry — moisture is the enemy of crisp. Pat chicken, vegetables, and especially potatoes dry before seasoning.
- Reheat leftovers in it — pizza, fries, and fried foods reheat better in an air fryer than a microwave. 350°F for 3-4 minutes and they're better than fresh delivery.
